Quick, easy, and delicious—these thumbprint cookies are a sweet treat that never disappoints

Ingredients:

1 cup of all-purpose flour sifted

1/2 cup unsalted butter, softened

1 teaspoon pure vanilla extract

1/8 teaspoon salt

3 Tablespoons powdered sugar

1 cup chopped pecans

1/2 cup of raspberry jam, or other flavor

Instructions:

1) sift flour and salt together in a small bowl and set aside.

2) In a medium bowl, cream the powdered sugar and butter until well blended.

3) Stir in the flour and salt mixture, half at a time, until all is added, and blend well.

4) Add pecans and vanilla.

5) Scrape the sides of the bowl so all the ingredients are together to form a ball. Cover the bowl and chill for several hours or overnight until the dough is firm.

6) Preheat the oven to 300—line baking sheets with parchment paper and set aside.

7) Roll the dough(teaspoon-size) into small balls and place them on the baking sheets. With your hand or the tip of a teaspoon, make a thumbprint in the center of each ball.

8) Fill with 1/2 teaspoon of jelly

9) Bake cookies for 20 minutes or until the edges are lightly golden.

Yields: 36-46 cookies, depending on the size.
